| Thinly slice the meat with a flat blade Thinly slice the garlic Wash the mushrooms and cut the tips off the stalks and cut into quarters Wash the spring onions,cut off the root and top 1/2" (12mm) and cut lengthways then cut into pieces about 1" (25mm) long Put one or two tablespoons cooking oil in the wok,when hot add the garlic and cook for 30 seconds Add the meat and cook until nearly done Add the oyster sauce Add the sugar Add the mushrooms,mange toute and onions and cook for about 2 minutes until mushrooms done Add the light soy sauce Add the dark soy sauce Add the spring onions cook for a futher 1 minute the turn off and serve Tip:- If it gets a little dry add a drop of water.Don't over cook the vegetables and onion - they should still have a crunch! |
